Start by preparing your fruit

  1. Always use ripe fruit and berries.
  2. Wash them using cold water.
  3. Make sure you remove any pits, stones, stems and blemishes
  4. For certain fruits, you may also want to remove the skin. These include peaches, nectarines, mangoes and apples.
  5. Slice your fruits evenly. Making sure each piece is the same to ensure they dry at the same rate.
  6. Make a solution of lemon juice and water.
  7. Soak your fruit in the solution for around 10 minutes.
  8. Drain the fruit to remove the solution.
  9. Use a lint-free towel to blot the fruit dry.
  10. Preheat the oven to 130-160°F. Higher temperatures like these are loved by strawberries and other whole berries.
  11. Are you drying out thinly sliced fruits such as apple or peaches? You may need a lower temperature.
  12. Cover baking trays with parchment paper.
  13. Arrange your fruit on top of the parchment paper, ensure they are in a single layer and do not touch each other.
  14. Use a pizza screen or pan liner to prevent them from curling.
  15. Put your fruit into the oven.
  16. Rotate your trays every 2 hours.
  17. Place it in a glass or plastic container.
  18. Shake your container of fruit every day or so.
  19. After between 4-5 days uncovered all the moisture should have evaporated.
  20. Place a lid on the container after 5 days.
  21. Consume your dried fruit within 10 months.
